Oatmeal Cake

1-1/2 cups hot water
1 cup Quaker Oats (red box)
1 cup brown sugar
1 cup white sugar
1-1/2 cup flour
1/2 cup oil
2 eggs
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon salt
6 tablespoons margarine
2 tablespoons milk
3/4 cup sugar
1-1/2 cup coconut flakes

Utensils: 9 x 13 inch pan.

Preheat oven to 350F. Put oatmeal in a small bowl. Pour hot water over oatmeal. In mixing bowl cream brown and white sugar and oil, add eggs. Mix remaining dry ingredients, add oatmeal and mix 2 minutes. Pour in a greased 9 x 13 inch pan. Bake for 40 minutes.

To make topping:
In a saucepan add margarine, milk, sugar. Cook on low beat until mixture comes to a boil. Add coconut. Using a fork spread on top of cooked cake. Turn oven to 500F. Return cake in broiler for 2 minutes, until topping is light brown. Remove and let cool. Leave in pan for 10 minutes.

Cut into 24 squares.
