Japanese Plum Cobbler

3 cups peeled seeded plums
1 stick margarine (1/4 lb)
3/4 cup fructose
3/4 cup all-purpose flour
Pinch of salt
3/4 cup 2% low fat milk
2 teaspoons baking powder
1/2 teaspoon vanilla
1 teaspoon cinnamon

Utensils: 11 x 7 inch Pyrex dish.

Preheat oven to 350F. Melt butter or margarine in deep baking dish. Make batter of fructose, flour, baking powder, salt and milk. Pour over melted margarine. Pour plums on top of batter. Do not stir. Sprinkle with vanilla flavoring and cinnamon. Bake for one hour. Top with Cool Whip or ice cream. Cut into six squares. Top with Cool Whip or your favorite ice cream (sugar free for diabetics).
