Utensils: 8 x 8 x 2 inch baking pan. Oven temperature 350F.
Sift together flour, soda, salt, cinnamon, sugar, and cocoa. Set aside. Measure whole bran cereal and coffee into ungreased pan. Stir to combine. Let stand 1 to 2 minutes or until most of liquid is absorbed. Mix in oil, vinegar and vanilla. Add sifted dry ingredients. Stir until smooth. Bake in 350 degree F oven about 40 minutes or until wooden pick inserted near center comes out clean.
Serve with cinnamon-flavored whipped topping, orange or lemon sauce, or ice cream. Sprinkle with nuts, if desired.
