English Trifle

2 packages vanilla instant pudding
1 pound cake or sponge cake
1 cup sherry
1 large can apricots
2 bananas, sliced
2 cans (8 ounces each) mandarin oranges
1 large can chunk pineapple
1 pint heavy cream, whipped and sweetened

Mix vanilla pudding as directed on package; chill. Slice cake lengthwise; line 3-quart bowl with cake. Soak cake with sherry. Cover with apricots, spread with 1/2 vanilla pudding. Add layer of bananas, mandarin oranges and pineapple. Cover with remaining vanilla pudding. Spread sweetened whipped cream over top, sealing the edges. Chill for at least one hour.

Yield: 12 servings
