Special cooking utensils necessary: 10 inch spring form pan.
Crust:
Spray sides of pan with Pam, first. Mix Graham cracker crumbs and nutmeg. Spread thin and
flatten with spoon over bottom of 10 inch spring-form pan.
Filling:
Stir cream cheese until smooth. Add half of sugar and blend, then add remainder of sugar and
blend. Add sour cream and flavorings. Blend. Add eggs. Mix. Pour gently, into pan. Bake for one
hour or until light brown. Reduce to 200F and leave in oven another hour. Turn oven off
and leave in oven until cool to touch. Center should be firm. Chill overnight.
