Apple Cake 1

3 cups flour

2 cup sugar

3 cups chopped apples

1 teaspoon baking soda

1 teaspoon salt

2 teaspoons cinnamon

1-1/4 cups cooking oil

2 eggs

2 teaspoons vanilla

1 cup chopped pecans

Preheat oven to 350F. Mix first six ingredients together, add oil, eggs, vanilla and pecans. Mix all together with hands. Bake in a 9 x l3 inch Pyrex dish at 350F for 30 minutes. Cut in squares.

Serves 12.
