Cheese Cake 1

2 cups Graham cracker crumbs
3 tablespoons sugar
1 tablespoon cinnamon
3 tablespoons butter, melted
Three 8-ounce package cream cheese
1 cup sugar
3 eggs
1 cup sour cream
1 teaspoon vanilla
Toasted pecans
Hot fudge ice cream topping
Hot caramel ice cream topping

Special cooking utensils: Springform cake pan

Preheat oven to 325F. Combine first 4 ingredients. Press into bottom and sides of springform pan (do not grease pan). Beat together cream cheese and sugar. Add eggs and beat until blended. Add sour cream and vanilla. Blend until mixed. Pat mixture into crust and bake for one hour at 325F. Chill overnight or at least 3 hours. Cut and serve.
