Apple Cake 2

3 cups apples, chopped
1 cup nuts, chopped
2 cups sugar
1/2 teaspoon nutmeg
1 teaspoon cinnamon
Pinch of salt
1 teaspoon vanilla
3 cups cake flour
2 teaspoons baking soda
2 eggs
1 cup oil

Preheat oven to 350F. Chop fresh app1es by hand. Put in large bowl. Cover the apples with the sugar. Do not mix. Put the chopped nuts, nutmeg, cinnamon, salt and vanilla on top. Let stand about 30 minutes. Grease and flour a bundt pan or a tube pan. Sift cake flour with baking soda. Set aside. Break eggs into a separate dish. Beat them. Add cup of oil, beat this mixture well. Stir the apple-sugar nut and spice mixture. Mix in the flour. Pour in the egg oil mixture and stir and stir until it is mixed well.

Pour into greased and floured pan. Bake for 1 hour. Check for doneness with a toothpick. If toothpick comes out clean, it is done.
