Sugarless Cake

One 16-ounce box raisins
1 whole orange
1 cup hot water and 1 teaspoon soda, mixed
1/2 teaspoon salt
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla
3 eggs
2 tablespoon oil, or margarine
1 cup nuts, optional
Frosting:
1/2 cup cottage cheese or cream cheese
1 tablespoon Sweet and Low
1/2 bar butter or margarine
1/8 teaspoon salt

Grind together, raisins, orange and rind (food processor). Mix hot water and soda and pour over raisin and orange mixture. Sift together flour, baking powder and remaining 1 teaspoon soda and add to above. Add vanilla, eggs, oil and nuts. Stir well. Pour in greased 9 x l3 inch pan, preferably Pyrex. Bake at 350F for 45 minutes. Combine frosting ingredients. Frost cake when cool.
