Orange Banana Bread

1 cup butter or margarine
2 cups sugar
1/4 teaspoon salt
2 teaspoons soda
4 cups flour
4 eggs
1 large orange rind, grated (1 tablespoon or more)
1/2 cup (or more)juice from orange
6 large, very ripe bananas, Mashed
1 cup finely chopped pecans

Preheat oven to 250-300F. Cream together butter and sugar. Sift together dry ingredients. Add eggs one at a time, alternating with more of the dry ingredients and beating well. Add rind and juice; mix well. Add bananas; mix well. Fold in nuts. Pour into 8 greased mini loaf pans. If using larger pans adjust baking time. Center should be dry. Give as gifts or slice and serve while still warm.
