Caramel Flan

3/4 cup sugar
4 large eggs
1-3/4 cups water
1-3/4 ounce can sweetened condensed milk
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Preheat oven to 350F. In a heavy, cast iron skillet, over medium heat, cook sugar, stirring constantly, until melted and caramel-colored. Pour into an ungreased 9 inch round baking pan tilting to coat bottom evenly, and completely. In medium mixing bowl, beat eggs; stir in water, condensed milk, vanilla and salt.

Pour into caramelized pan; set in a large pan. Fill pan with 1 inch of boiling water. Bake 55 to 60 minutes or until knife inserted near center comes out clean. Chill thoroughly or overnight. Loosen sides of flan with knife; invert into serving plate with rim. Garnish with whipped cream and strawberries. Refrigerate leftovers.
