Oatmeal Orange Original

Cookies:
1 cup margarine
3/4 cup sugar
3/4 cup light brown sugar, packed
2 eggs
2 cups all-purpose flour
1 teaspoon soda
1 teaspoon salt
2 cups regular oats
1/2 to 3/4 cup All Bran cereal
Small package butterscotch morsels
1/2 to 1 cup candied citrus peel
Recipe follows:
1 cup ground pecans
1/2 cup currants
1 teaspoon each orange and almond flavoring
Candied Citrus Peel:
Sweet mild, thin skinned citrus
Sugar to barely cover
1/8 teaspoon salt

Candied Citrus Peel:
Remove meat and membranes from sweet mild, preferably thin-skinned orange or grapefruits. Cover with water in heavy saucepan and boil slowly for 10 minutes. Drain, rinse, cover with fresh water and repeat twice more carefully scraping inside of rind each time with a teaspoon. Cut into 1/2 x 1 inch strips with scissors. Put into heavy saucepan and sprinkle generously with sugar and 1/8 teaspoon salt. Cook down completely, watching not to burn and stirring frequently with a wooden spoon. Ground pecans may be added. Remove to waxed paper to cool.

Cookies:
Preheat oven to 375F. Cream margarine and sugars. Add eggs. Combine flour, soda, and salt and add to creamed mixture. Add oats, All Bran, butterscotch morsels, candied orange peel or substitute zest of two oranges, ground pecans, currants and flavorings. Drop by rounded teaspoon on greased baking sheet and bake about 10-12 minutes until lightly browned. Cool on rack.
