Easy Apple Muffins

1 large egg, beaten
3/4 cup Milk
5 tablespoons butter, softened
1-3/4 cups all-purpose flour
1/2 teaspoon
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 apple, peeled and chopped

Preheat oven to 425F. Mix eggs, milk and butter. Mix dry ingredients. Combine with milk mixture. Add apple. Pour into 12 cup muffin pan. Sprinkle additional cinnamon and sugar to taste (optional). Bake 15 minutes. Place pan on wire rack to cool 10 minutes. Dislodge muffins and place on rack to finish cooling. Serve warm or cold.
