Shortbread

1 cup confectioners' sugar
1 lb butter
1/2 teaspoon salt
4 cups flour
Sugar, for rolling
Strawberries with syrup, or any fruit with syrup
Whipped cream, sweetened with apple jelly
Mint springs for garnish

Preheat oven to 350F.

Combine confectioners sugar, butter, salt and flour. Roll out and divide in half. Leave crumbly. Roll dough in sugar. This will keep it crisp. Roll 1/2- inch thick and cut with biscuit cutters. Place on parchment-lined baking sheet.

Bake 20-25 minutes or until fight golden brown. Place on dessert plates. Spoon strawberries onto short bread. Spoon whipped cream sweetened with apple jelly on top. Garnish with mint sprigs.
