Bread Pudding 3

8 or 9 slices bread, toasted (or stale white) both sides and cut into 1/2 inch cubes
1/4 teaspoon salt
1 teaspoon vanilla extract
One 17-ounce can fruit cocktail, drained cherries
1/4 teaspoon cinnamon
3 eggs, well beaten
2 cups liquid creamer or milk
1/2 teaspoon nutmeg
1 teaspoon rum extract
2 tablespoons sugar
Cool Whip

In 2-1/2 quart Corning casserole dish; mix bread, salt, vanilla, fruit cocktail, eggs, cinnamon and creamer. Make sure all liquid is absorbed. Mix nutmeg and sugar and shake over top of mixture. Bake 25 minutes at 350 F. Garnish with Cool Whip and cherries. Can be eaten hot or cold.
