Peach Cobbler 3

3 cups all-purpose flour
1 teaspoon salt
1 cup Crisco shortening a tablespoons water, chilled
1 cup sugar
4 tablespoons all-purpose flour
2 teaspoons cinnamon
One 45-ounce can peaches
Sugar

Preheat oven to 400F. Sift together flour and salt. Work in shortening. Mixture should be crumbly. Add water a little at a time. Mixture should make a ball. Divide into thirds. On floured surface, roll out a third of the dough to 1/8 inch thickness. Cut into 1 inch strips. Bake until light brown, about 8 minutes. Roll a third of the dough into rectangle to fit 9 x 13 inch pan. Roll remaining one third of the dot into strips for top of cobbler. cook sugar, flour cinnamon, and peaches in microwave for 5 minutes. Spoon half of the filling onto dough in pan. Put cooked strips on top. Spoon on remaining half of filling. Place raw strips on top; sprinkle with sugar. Bake 375F until golden brown.
