Grated Sweet Potato Pudding

2 eggs
1/4 cup sugar
1/4 teaspoon salt
1/4 cup maple syrup or honey
1 cup milk
3 cups raw, grated sweet potato
2 tablespoon butter, melted
1 teaspoon nutmeg

Preheat oven to 375F. Beat eggs well and add the sugar, salt, syrup, and milk. Blend the potatoes, butter, nutmeg, and pecans with the egg mixture and pour into a buttered 11-3/4 x 7 x 1/2 inch pan. Bake 50-60 minutes at 375F.
