Carrot Cake 7

1 cup brown sugar, unpacked
1/2 cup white sugar
1 cup whole wheat flour
1 cup self-rising flour
2 teaspoons soda
2 heaping teaspoons cinnamon
1 teaspoon salt
4 eggs
1-1/2 cups applesauce
3 cups grated carrots
Icing:
1 stick margarine (1/4 lb)
One 8-ounce package cream cheese, softened, but still cool
1 heaping cup powdered sugar
2 teaspoons vanilla extract

Preheat oven to 350 F. Combine dry ingredients and mix well. Add eggs and applesauce and mix well. Add carrots and beat on medium speed with electric mixer for two minutes. Line bottoms of two 9 inch cake pans with waxed paper. Divide batter evenly and bake for 25 to 30 minutes. For icing, beat ingredients until creamy and fluffy. Ice cake and refrigerate.
