Cut ice cream sandwiches in half, lengthwise, and place half of them into a 6 x 6 x 2 inch dish, chocolate side down.
Spread half of Cool Whip over the upturned ice cream side of sandwich halves. Place remaining halves on top of Cool Whip layer, chocolate side up. Spread remainder of Cool Whip on top of this layer. The completed product will resemble an ice cream sandwich with a Cool Whip center. Freeze for 30 minutes, slice and serve. Top with cherries if desired.
