Cheese Pound Cake

1-1/2 cups butter, softened
One 8 ounce package cream cheese, softened
3 cups sugar
6 large eggs
3 cups all-purpose flour
Dash of salt
2 cups (8 ounces) sharp Cheddar cheese, finely shredded
1 tablespoon vanilla extract

Preheat oven to 325F. Beat butter and cream cheese at medium speed 2 minutes, or until creamy. Gradually add sugar, beating 5 to 7 minutes. Add eggs, one at a time, beating just until yellow disappears.

Combine flour mixture. Beat at low speed. Stir in Cheddar cheese. Pour into a greased and floured 10 inch tube pan. Bake 1 hour 45 minutes or until a wooden pick inserted in cake comes out, clean. Cool. Remove from pan. Serve with apple butter if desired.
