Almond Biscotti

2 cups all-purpose flour
1 cup sugar
1 tsp baking powder
1/8 tsp salt
2 tbs softened butter, cut into pieces
3 eggs
1/2 tsp vanilla
1 cup (4 oz) finely chopped toasted almonds

In food processor fitted with steel blade, combine flour sugar, baking powder and salt with 4 on/off turns. Add butter; process until fine crumbs form. Add eggs and vanilla; process until dough forms a ball. Stir in almonds by hand. Chill 1 hour

With floured hands, shape rounded tablespoonfuls of dough into 3x1/2-inch logs; place on greased cookie sheet Sake in preheated 325F oven for 25 to 30 minutes or until golden brown. Transfer to cooling rack. Cool completely.

Makes about 3 dozen.
