Sprinkle bottom of lightly buttered 9 inch spring form pan with graham cracker crumbs. cream cheese and sugar well. Add the eggs, one at a time, mixing well after each egg. Add Amaretto, extract and cocoa mixed into a paste with water. Blend well. Pour into pan and bake at 325Fdegrees for 25-30 minutes until edge is slightly puffed. Let cool 10 minutes but do not turn oven off. Mix topping well and spread over cheesecake. garnish with almonds. Return to oven for 10-12 minutes. Remove, let stand for 10 minutes. Refrigerate at least 12 hours.
