Blueberry Ice

1/2 cup sugar
1-1/2 tsp unflavored gelatin
1-1/2 cups water
1-1/2 cups fresh blueberries, washed and drained
3 tbs lemon juice

In medium saucepan combine sugar, gelatin and 1 cup of water. Heat and stir over medium heat until dissolved. Remove from heat; add remaining water, berries and lemon juice. Freeze in refrigerator tray until firm. Break apart into chunks and beat until smooth. Return to tray and freeze until firm.

Yield: 6 servings.
