Cheese Stuffed Pecan Pumpkin Muffins

2 cups flour
1/2 cup sugar
1/2 cup chopped pecans
1 tbs baking powder
1-1/2 tsp pumpkin pie spice
1/2 tsp salt
2 eggs, slightly beaten
3/4 cup canned pumpkin
1/2 cup butter or margarine, melted
1/4 cup sour cream
One 3 oz pkg cream cheese, cut in cubes (size and number depending on muffin size)
Cinnamon-sugar to taste (optional)
Wheat germ to taste (optional)

In a large bowl, mix flour, sugar, pecans, pumpkin pie spice, baking powder and salt. In a small bowl, mix eggs, pumpkin, butter and sour cream. Add to flour mixture, stir just until blended. Fill greased muffin pan 1/3 full. Place a cream cheese cube in the center of each. Add more batter to fill pan 2/3 full. Sprinkle tops with cinnamon, sugar and wheat germ. Bake in preheated 400F oven until toothpick inserted in center comes out clean, 15 to 25 minutes for muffins.

Makes 36 miniatures or 12 regulars.
