Chinese Ambrosia Pie

One 3 oz pkg. cream cheese, softened
1/2 tsp ginger
2 tbs milk
1 tsp almond extract
1/2 and 1/3 cups sugar
3 tbs cornstarch
1 cup orange juice
Two 8 oz can mandarin oranges (drained and cut into small pieces)
1/2 cup fixed coconut
One 20 oz can pineapple chunks
1 Graham Cracker pie crust

Combine cream cheese, ginger, milk, almond extract and 1/2 cup sugar. Spread on bottom and sides of crust. In medium sauce pan, combine cornstarch, remaining 1/3 cup sugar and orange juice. Cook over medium heat until very thick and clear. Cool to lukewarm. Stir oranges and pineapple pieces into sauce. Pour into crust. Sprinkle with coconut. Chill at least 2 hours or until sauce is set.
