Fresh Apple Nut Cake

2 eggs
1-3/4 cups sugar
1 cup vegetable oil
2-1/2 cups sifted Martha White Self-Rising Flour
1 cup chopped walnuts
3 cups chopped peeled apples
1 tsp cinnamon
1 tsp vanilla Cream Cheese Icing (see below)

Preheat oven to 300F. Grease 13x9x2 inch baking pan; set aside. Combine eggs, sugar and oil in bowl; blend well. Gradually add flour; blend well. Stir in walnuts, apples, cinnamon and vanilla; blend well. Pour into prepared pan. Bake one hour and 10 minutes or until toothpick inserted in center comes out clean. Cool in pan. Frost with Cream Cheese Icing.

Cream Cheese Icing:
1 pkg. (8 oz) cream cheese, at room temp.
1/2 cup butter or margarine, softened
4-1/2 cups (16 oz) confectioners sugar, sifted
2 tsp vanilla

Combine all ingredients in mixing bowl. Beat with electric mixer until smooth and creamy.
