Beat margarine and sugar until light and-fluffy. Blend in eggs and vanilla. Add combined dry ingredients; mix well. Stir in pecans. Drop heaping measuring tablespoonfuls of dough onto greased cookie sheet. Bake at 350F for ten to twelve minutes or until golden brown. Cool. For each sandwich, cover one cookie with approximately 1/2 cup ice cream; top with second cookie. Press cookies together. Wrap securely in plastic wrap. Freeze.
