Pear Tarts with Wine

3 ripe pears, peeled, halved and cored
2 cups red wine
1/2 cup water
1 cup granulated sugar
Cinnamon stick
6 cloves
6 peppercorns (optional)
1/2 tsp vanilla extract
2 tsp lemon juice or 3 of lemon zest
2 tbs raspberry jam
One ready made 8-inch pie crust, or your favorite recipe

Bake pie crust separately until slightly golden. Set aside to cool. Simmer together in large saucepan, cinnamon stock, cloves, peppercorns, vanilla, lemon juice, wine, jam and water. Boil gently for 15 minutes, until slightly reduced. Add pears to wine and water and simmer for 10 minutes or until tender. Do not overcook. Remove and cut into thin crescent slices. Spoon pear filling into shell. Let sit for 5 minutes and serve warm.
