Red Velvet Cake 1

1-1/2 cups sugar
1/2 lb butter or margarine
2 eggs
2-1/2 cups flour
1 tsp vinegar
1 tsp butter extract
1 tsp cocoa
1 cup buttermilk
1 tsp soda
1 oz red food color
1 tsp vanilla extract

Cream butter and sugar. Add eggs one at a time, beating well after each. Add flour, and cocoa and buttermilk alternately until all have been added. Add soda mixed with vinegar, vanilla, butter extract and red food coloring. Pour into three 8 inch cake pans which have been greased and floured. Bake for 25-30 minutes.

Icing:
1 cup regular milk
3 tbs flour
1/2 lb butter or margarine
1 cup confectioners sugar
1 tsp butter
1 tsp vanilla extract

Cook milk and flour on low heat until thick, stirring constantly. Remove from heat, cover and set until cool. Beat butter and sugar until fluffy. Add cooled flour and milk. Beat until light. Add butter and vanilla extract. Frost cake.
