Combine rice, 3 cups milk, sugar, butter and salt in 2 quart saucepan. Bring to a boil. Stir. Cover; simmer until very thick and creamy, about 50 minutes, stirring occasionally. Beat eggs and remaining milk. Stir into rice mixture. Cook 2 minutes. Add extracts, Cool. Whip cream. Reserve 1/2 cup for garnish; fold remainder in pudding. Chill. Alternate pudding and fruit in layers in parfait glasses. Garnish with reserved cream.
