Sunshine Citrus Mold

One 8 oz can juice packed crushed pineapple
Two 6-1/2 oz cans mandarin orange sections
2 envelopes unflavored gelatin
1 packet artificial sweetener
1/3 cup chopped walnuts
1 can diet ginger ale, chilled (12 oz)

Drain fruit, reserving juice. In a small sauce pan, soften gelatin in juice, then heat and stir until gelatin is dissolved. Stir in artificial sweetener. Transfer to medium-size bowl and refrigerate about 45 minutes until chilled but not set. Stir in fruit and walnuts. Slowly pour ginger ale down the side of the bowl; stir gently until blended. Chill until partially set, about 45 minutes. Spoon into individual 1/2-cup molds. Chill until firm about 1 hour. Un-mold.

Makes 8 servings.
