Yam Muffins

1-1/2 cups of flour (self-rising) When using plain flour, add 1/2 teaspoon baking soda
1/2 tsp salt
1/4 cup shortening or butter
1 egg
1 cup milk
1/2 cup Bruce's Mashed Yams

Pour in muffin pans and bake 20 to 30 minutes at 350F.
