Louisiana Yam Donuts

1/3 cup sugar
3/4 cup Bruce's Mashed Yams
1 egg
2 tbs melted solid all-vegetable shortening
1/2 cup milk
1-1/2 cups sifted all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/3 cup seedless raisins, solid all-vegetable shortening for deep frying
1/4 cup sugar or confectioners sugar
1/2 tsp cinnamon or nutmeg

Blend together 1/3 cup sugar, Yams, egg, melted shortening and milk. Sift together flour, baking powder and salt; add to yam mixture and stir lightly. Mix in raisins. Drop by heaping teaspoonfuls into shortening, heated to 365F. Fry about 2 minutes or until browned on all sides. Drain on paper towels. Mix 1/4 cup granulated or confectioners sugar and nutmeg or cinnamon in a bag. Shake warm donuts in a bag with sugar.

Makes about 2-1/2 dozen.
