Cream of Broccoli and Crab Meat Soup

2 cup onions, chopped
1/2 cup celery, chopped
1 gallon of chicken stock
24 oz. whipping cream
1 lb. broccoli, chopped
1 lb. crab meat, claw meat
8 tbsp. instant potatoes
Season to taste
Salt and red pepper
1/2 lb. butter or margarine

Saute onions, celery and broccoli in butter until tender. Add to 1 gallon of chicken stock in large stock pot. Add salt and pepper to taste. Cook on medium heat for 20 minutes. Add crab meat and cook for 20 minutes. Add instant potatoes until thick. Will thicken more later. May add more instant potatoes if thicker mixture is desired. Add whipping cream. Remove from heat. Cover and let it set for 15-30 minutes.
