French Lentil Soup

2 cup lentils
1/2 cup celery, diced
1 onion, minced
1/4 lb. smoked sausage
3 qts. cold water
2 thin slices of garlic

Soak lentils overnight. Drain. Place in pot with sausage, celery, onion, garlic and water. Simmer 4 hours until tender, adding more water if necessary. When about done, add salt and pepper to taste (optional).
