Fresh Fruit Gazpacho

3 lg, ripe tomatoes, peeled (seeded, if desired)
3 cup freshly squeezed orange juice
1 tbsp. sugar
2 tsp. grated orange peel
1 cantaloupe, seeded, peeled, cubed (2 cups)
1 small honeydew melon, seeded, peeled, cubed (2 cups)
1 lg. apple, cored, un-peeled, cubed
1 cup halved fresh strawberries
1 cup fresh blueberries
1 kiwi, peeled, sliced
Fresh mint, for garnish

In food processor or electric blender, puree tomatoes. Add orange juice, sugar, grated orange peel, half the cantaloupe, half the honeydew and papaya; process until smooth. Pour into large serving bowl; stir in remaining fruit. Cover; chill 4 to 6 hours or until very cold. If desired, garnish with fresh mint.

Makes about 8 cups, 8 servings
