Skillet Gumbo

2 cup diced cooked ham or canned luncheon meat
1 cup each chopped green peppers and onions
1 pkg. (10 oz.) frozen cut okra
1 can (14-1/2 to 16 oz.) tomatoes
1 cup chicken broth
1 tsp. salt
1/8 tsp. ground red pepper
1/2 cup uncooked rice

Combine all ingredients except the rice in a heavy large skillet. Bring to a boil. Cover and simmer for 10 minutes. Stir in rice. Replace lid and simmer 20 minutes or until rice is tender. Adjust seasonings, if necessary.

Serve with Lettuce Wedges with 1000 Island Dressing, Corn Muffins, Lemon Ice Box Pie.

Makes 2 servings.
