Turkey and Sausage Gumbo

Leftover turkey
1 lb. smoked sausage
1/2 cup oil
1/2 cup flour
1 cup chopped onions
1 clove garlic
Chopped onion tops and parsley
Salt and pepper to taste

Remove meat from turkey bones. Simmer bones and skin in one gallon water for about 1 hour. Make roux with oil and flour, cook until wilted. Add water from simmered turkey bones. Cut sausage in rings and brown on both sides. Add sausage and turkey meat to roux mixture. Continue cooking until meat is tender. Season to taste. Add onion tops and parsley. Add file to each plate of gumbo.
