Fry hen and sausage; drain grease. Pour three gallons of water into a large pot. Add roux, then onions, bell pepper and celery. Add seasonings to water. Let boil 1 hour; add hen and sausage. Cook until hen is tender. Add onion tops, turn off and cover pot. Serve over rice with potato salad and bread.
