Hen and Sausage Gumbo

1 cut-up hen
1 pound Richard's smoked sausage
2 pounds Dwight's fresh sausage
3 gallons water
1 pint roux
3 medium yellow onions
1 cup celery, chopped
1 cup green onion tips
1/2 cup bell pepper
Salt, to taste
Red and black pepper, to taste
Garlic powder, to taste
MSG, to taste
Chicken base, to taste

Fry hen and sausage; drain grease. Pour three gallons of water into a large pot. Add roux, then onions, bell pepper and celery. Add seasonings to water. Let boil 1 hour; add hen and sausage. Cook until hen is tender. Add onion tops, turn off and cover pot. Serve over rice with potato salad and bread.
