Old Fashioned Chicken Gumbo

1 large fryer or hen, cut-up
4 tablespoons roux
1 cup chopped onions
1 bell pepper, chopped
2 ribs celery, chopped
1/2 cup parsley, chopped
1/2 cup green onions, chopped
4 quarts cold water
Seasonings to taste
1 pod garlic, finely chopped
1 can chicken stock
1/4 teaspoon oregano
1 teaspoon Tabasco sauce
1 tablespoon of Worcestershire sauce

Dissolve roux in water on medium heat and let boil for about 1 hour adding onions, bell peppers, celery, garlic, oregano and seasoning. Then add the cut up chicken pieces, remove the skin if desired. Let cook for 1 hour or until chicken is well done. Add green onions and parsley.

Serves 6-8.
