Cream of Broccoli Soup 3

3 tbs margarine
1/4 cup all-purpose flour
4 cups chicken broth
1 lb broccoli cut into florets, stalks removed
1/4 cup half and half
1 egg yolk slivers of lemon peel

Place butter in two quart microwave proof casserole dish and cook on high, 1 tp 1-1/2 minutes, or until melted. Stir in flour and mix until smooth. Blend in stock. Cover with casserole lid and cook on high seven minutes. Add broccoli and blend well. Cover and cook on high 15 minutes or until tender. Let stand ten minutes.

Transfer soup to blender or food processor in batches and puree. Return to casserole dish cover and cook on high four to five minutes or until headed through. Beat half and half with egg yolk in small bowl. Add a little warm soup and blend well. Beat mixture into remaining soup a little at a time. Blend well. Cook minutes. Garnish with lemon peel.
