Chop the onion, mince the garlic. In a soup pot, brown the ground beef with the onion over medium-high heat. Pour off the fat from the pan and discard. Add the garlic, thyme, tomato juice, broth and 1/2 tsp salt. Cover and simmer 10 minutes. Add the vegetables and the parsley. Cover and cook until heated through about 5 minutes.
