Special Potato Soup

6 diced potatoes
2 diced carrots
2 diced celery sticks
1 med onion, chopped
1/8 lb margarine
2 cups milk
1 cup cheese, any kind cut into pieces

Saute onions in margarine. Add potatoes, carrots, and celery. Pour in about 4 cups water. Allow to boil until vegetables are tender. Do not drain. Mash vegetables. Pour in milk, lower heat to simmer. Add cheese and allow to melt. Season with salt and white pepper.

Chopped chicken breast or sliced smoked sausage can be added and cooked after vegetables are mashed.
