Andouille Jambalaya

Pork
1 lrg Chopped Onion
1 lb Sliced Andouille
1 Can Water
1 Can Tomato Sauce
1/2 tsp Thyme
2 Bay Leaves
2 cups Cooked Rice
To Taste Salt & Pepper

*** Fry sausage rings until slightly brown. Add onions, tomato sauce and water. Add seasonings, salt & pepper. Cook 15 to 20 minutes on slow fire. Mix thoroughly. Heat on a simmer fire a few minutes. Serve hot.

Yield: 6 Servings
