Nutty Rice

2 cup chicken broth
1 cup cooked chicken
1 cup raw rice
1 tbsp. butter or margarine
3 tsp. salt
1/4 tsp. red pepper
1/2 cup cashews
2 tbsp. parsley, chopped
1/2 tsp. curry powder

Combine chicken broth and chicken in a small saucepan; bring to a boil.

In a large sturdy saucepan, melt butter with rice and stir until brown. When rice is almost brown, add remaining ingredients. Add boiling broth to browned rice. Stir well and let steam for 20-25 minutes.
