Crawfish Jambalaya 5

1 pound clean crawfish tails
One 10-ounce can chicken broth
1/2 small onion, diced green onions and bell pepper
One 2-ounce can mushrooms (to your liking)
1/4 pound butter
Salt, pepper, Tony Chachere's seasoning
3/4 cup washed rice

Special cooking utensils: Rice cooker

Spray rice pot with Pam to avoid sticking. Use a rice cooker 6 cup minimum. Mix all ingredients, crawfish, broth, onions, peppers. mushrooms, butter, seasoning and rice in cooker. Hand-stir all ingredients.

Seasoning should be based on your taste. Tony's works great. It will take about 25 minutes to cook. You may stir once or twice during cooking. (Note: You can easily substitute shrimp for crawfish)

Serve hot with vegetables and bread
