Baked Rice

1 cup chopped onions
2 tbs butter or margarine
3 cups cooked rice
1 pkg (10 oz) chopped spinach, cooked
1/2 tsp each garlic powder, basil leaves, and ground thyme
3 eggs
1/2 cup grated Parmesan cheese

Cook onions in butter until tender. Add rice, spinach, and seasonings. Beat eggs and stir into rice mixture. Turn into a buttered 2-quart casserole.

Sprinkle with Parmesan cheese. Bake at 375F for 20 minutes.

Microwave Instructions:
Place butter in a shallow 1-1/2 to 2-quart microwave proof baking dish. Cook on HIGH (maximum Power) 1 minute. Stir in onions. Cook on HIGH 2 minutes. Add rice, spinach, seasonings, and beaten eggs. Cook on HIGH 5 minutes. Sprinkle with cheese. Rotate dish 1/4 turn. Cook on HIGH 3 minutes.

Makes 6 servings.
