Busy Day Bake

1-1/2 pounds sliced beef liver
1 tsp salt
1/4 tsp ground black pepper
1/4 cup flour
3 tbs vegetable oil or shortening
1 cup each chopped celery and onions
1 green pepper, cut in strips
1 can (14-1/2 to 16 oz) tomatoes
3 cups hot cooked rice

Season liver with salt and pepper. Coat with flour. In a large skillet brown quickly in hot oil, about 1 minute on each side. Place in a greased baking dish. Add remaining ingredients except rice. Cover and bake at 350F for 30 minutes. Remove cover and cook 5 to 10 minutes longer to thicken sauce, if desired. Serve over beds of fluffy rice.

Makes 6 servings.

Rice may be cooked in oven while liver is cooking.

Crunchy Green Pea Salad, Hot Buttermilk Biscuits, Double Chocolate Cake.
