Calcutta Rice

2 tbs butter or margarine
1 to 2 tsp curry powder
1 tsp seasoned pepper
1 cup sliced celery
2 medium apples, peeled, cored, and sliced
1/4 cup sliced almonds
3 cups cooked rice

Melt butter; stir in curry powder and pepper. Add celery, apples, and almonds; cook until tender crisp. Stir in rice and heat thoroughly.

Microwave Instructions:
Place butter in a 2-quart microwave proof baking dish. Cook on HIGH (maximum power) for 1 minute, Stir in curry powder and pepper. Cook on HIGH 1 minute. Add celery, apples, and almonds. Cover and cook on HIGH 1-1/2 minutes. Stir in rice. Cover and cook on HIGH 4 minutes. Stir.

Makes 6 servings.
