Eggplant Rice Dressing 1

1 large eggplant
1 large onion
1 green pepper
1 small hot popper
14 pound ground beef (lean)
1/4 cup cooking all
1/2 tsp salt
1/2 cup raw rice
1/2 cup water

Heat oil. Add chopped onions and chopped peppers, Cook until soft. Add ground beef and brown lightly. Add raw eggplant, diced. Add raw rice and 1/2 cup water. Cover and smother, stirring occasionally, until eggplant and rice are cooked. Add a little water as needed.

Serves 4.
